suddenly knowing less about others doesn't seem so bad actually.

today i feel really weird. maybe there's too much hormones flowing in my blood or something. ok i'm weird out most of the time. anyway i just wanted to post a recipe. peanut butter cookies. this recipe was from the 500 cookies[which one day i'll get my hand on]... the same kind that like the 500 cupcakes and muffins one.

peanut butter cookies.
for the peanut butter lovers

ingredients:
200g plain flour
1/2 tsp bicarbonate of soda
115g unsalted butter
100g caster sugar
1 egg
225g crunchy peanut butter
pinch of salt

procedure:
sift flour, bicarb. of soda together. in another bowl beat butter and both sugars till soft and creamy. combine egg, flour mixture, peanut butter and salt. add butter and sugar mixture, mix till smooth.

wrap the dough in foil or parchment paper. refrigerate for at least two hours, preferably overnight.

preheat oven to 160C

shape the dough into 3cm balls and place them 5cm apart on baking sheets. flatten slightly. bake for 15 minutes or till golden brown.

remove from oven, cool. can be store up to 5 days in airtight container.

Today is also the day when IRONMAN premieres in Singapore

i want to watch it soon.

Homemade Marshmallows

this recipe is from Martha Stewart when she went on the Oprah. Which was a really long time ago...

Ingredients:

2.5 tbsps unflavoured gelatin
1.5 cups granulated sugar
1 cup light corn syrup
0.25 tsps of salt
2 tbsp pure vanilla extract
confectioner's sugar [icing sugar]

procedure:

combine gelatin and 0.5 cups of cold water in a bowl, whisk with an electric mixer

combine sugar, syrup, salt and 0.5 cups of water in a small heavy saucepan, over low heat, stir until sugar has dissloved. wash down sides of pan with a wet pastry brush to dissolve sugar crystals

cook syrup at high heat without stirring until syrup reaches firm ball-stage[244C] immediately remove pan from heat

with mixer on low speed, slowly and of course carefully pour syrup into gelatin. Increase speed to high; beat till mixture is thick and white [it should have tripled its volume] about 15 minutes. add vanilla; beat to incorporate.

generously dust an 8 by 12inch pan with confectioner's sugar. pour mixture into pan. dust again with confectioner's sugar. allow it to stand overnight uncovered, to dry out.

i haven't tried the recipe out myself. but it seems pretty simple... i guess the tricky parts will be reaching firm-ball stage and where to find a place to let it stand overnight without anything[/anyone for some] attacking it and it should be a cool place too...

leads & paths

been exactly a week, soon fyp will soon be over. hmm... i'm slightly stuck on what to write.

fyp, meant lots of food and blood donation this week. we made beef stew with the beef cubes that i brought. it was a pot of comfort it i am to describe it myself. the ppl we fed it with say it was good. faust calls it stone soup 'cause what we did was exactly like what the stone soup story was about. lucky us that we had great sense on what to put and what not. on my part i had have provided the recipe added apples, carrots, potato, celery, tomato, etc... faust added a number of herbs and spices with chicken soup and tomato soup. so yea it was stone soup. i guess the stone was the good few pieces of beef [they are delicious edible stones]



blood wasn't taken from us the first time we offered our arms. too little iron. they were much stricter this time. we ate the beef stew anyway.

the next day was fha. most of us were dress formal, on my part, i'm a vainpot and i couldn't find an appropriate pair of jeans. so i just wore the pants i bought. omg. my feets hurted. stupid shoes[but you look pretty, kinda] we ate gelato and cheese the most. everyone was just crowding infront of the display freezers. i LOVE hazelnut icecream. after all the walking and blistering of my feets. i went to tampines mall for dinner.

food. then on thursday we donated blood. and my arms weren't able to move much, after. the next day, my celbow was a patch of red.

saturday i got out. just tagged along with the rest and didn't buy anything. and left for dinner which i tot was a smart thing 'cause i had a big piece of chicken instead of the food that i was able to buy.

it's a great improvement.

we altered the bacon cheese chives muffin and now it feels more "muffined" quote from faust, "it taste pretty." yea it does doesn't it. it worked hahaha! perfectoe.

i wonder why did i use the wrong avocado actually... how both the avocado taste bitter after it's baked? what's a hass avocado anyway? all avocado looks the same to me and ntuc fairprice only sells one type of avocado /:

have you have weird dreams? i wonder why mine are so random. recently i dreamt that someone accused me of wearing mismatched lingerie... like wth? what's wrong with that wearing them that way anyway... and then i have dreamt about highchairs with bendable legs that were black with the knobs where the point it bends were electric blue. another one was the part where people waking only able articulate one word, eg."m mu mu muffin, mu'm muff!" then there were random people that i know appear in my dreams. i know i have said that my dreams were weird(before in previous posts) but i just want to say that again so maybe my mind will stop giving me weird dreams again.

mango chilli muffin is spicy la.

i should have used a sour mango i totally regret using that tasty, sweet, milky flesh thing. OMG! OMG! WASTED!! i threw the whole batch away WASTED! the poor mango. before that i realised the bloody recipe don't have the bloody temperature! like wth! mmmrrggghh... anyway correction from last post. not i will gain weight but i am totally gaining weight because of the fyp. I AM totally sacrificing my waistline. ok i sound so 'gay'.

so anyway back to the session i had this morning with the soggified muffin. like it didn't dry up in the inside )8 for nuts. -A- ben is very very disappointed with the recipe.

Mint chocolate cupcakes

We[faustine and i] tried this today 'cause we're too bored? haha real random moment. I will totally gain weight during this FYP OMG! T_T anyway this is the recipe which i got from the book[500 cupcakes and muffin the only cupcake compendium you'll ever need fergal connolly] that i finally have!

to me the icing is kinda diffcult to spread...

to make the cupcake you'll need

225g self-raising flour
4tbsp cocoa powder
1tsp baking powder
225g caster sugar
225g unsalted butter(softened)
4 eggs
1tsp mint essence
100g plain chocolate chips

for icing you'll need

115g unsalted butter(softened)
225g icing sugar(sieved)
1tsp mint essence
green food colouring
100g plain chocolate chips

[we halved everything 'cause i tot it was quite alot. We made more than 12 still. Maybe our cupcakes are much smaller than theirs]

alright procedure

First preheat oven to 160C.
Then Lay the muffin tins with cupcake cups.

In a medium bowl, sieve flour, cocoa powder abd baking powder.

In a HUGE bowl[preferably those deeper ones so whisking/whipping won't be as messy] beat the sugar and butter together till smooth[i use the electronic hand mixer]

Add in eggs one at a time, beat well after each addition

Add the flour mixture gradually, stir well. stir the mint essence and chocolate chips.

Spoon mixture into cups, 2/3 full.

Bake for 20mins, remove and cool for 5mins.


Making the icing you have to first beat butter and icing sugar in a small bowl till smooth and creamy.

Then stir in mint essence and just enough food colouring to make it mint green.

spread the icing on the cupcake and decorate with chocolate chips.

and your cupcakes are ready-to-eat!

makes 1.5 dozen = 18.

ooo soup

i love soup A LOT! and congee i wonder why some do not like them at all. anyway this recipe is oxtail stew! i like.

ingredients

3lb oxtail separated joints
1 large yellow onion chopped
2cups stock
1cup water
2cups red wine
1 garlic clove; minced
2 to 3 cups chopped vegetables carrots, celery [i guess all the hard vegetables you can find]
0.25 cup tomato paste
salt & pepper
thyme & bay leaf

first of all preheat the oven at 177C

season oxtail with salt & pepper

sear oxtail in oven over a casserole on all sides intil golden brown

add 0.25 cups onions cooked until translucent

heat stock, water and wine together in another pot.

take out casserole amd add stock mixture in

add a tsp of salt and 0.5tsps pepper and let it simmer

then place the casserole back into the oven again with a cover, let it cook in there for 3hours

remove casserole and add in vegetables, the rest of the onions, the tomato paste, garlic, thyme and bay leaf.

place it into the oven again for another hour

remove the casserole from the oven and let it sit for a few minutes.
skim off fat and oxtail stew is now ready to eat!
